    Cooking is one of great experience for those who love to cook food and make new ways to make it more tasty and healthy. There are many methods of making food such as baking, braising, enhancing, poaching, roasting, sauteing, steaming, stir frying, grilling, and broiling. Now we have a look on making food with grilling methods.

    Grilling is a method of cooking food where the food items are fairly exposed in thin pieces to direct or indirect heat. It can be categorized into direct grilling, indirect grilling, and multilevel grilling methods.

    Direct grilling methods refers to cooking when the food is directly placed over the hot coals that are usually not covered. This is required to maintain optimum temperature of the coals. It is therefore called true grilling since the essence of grilling that involves not just quick searing but adds the char and caramelizing in the food that has been grilled.

      Indirect grilling methods cannot be said true grilling rather it is more of oven roasting that is done on the grill outdoors. In this method heaps of coals are mounted on both the sides of the grill and there is an open space kept between them that is often separated with drip pan. By this method of grilling one place the food at the center portion of the grill and is not cooked directly. The grill is covered in order to build up heat that would be enough to properly roast. So if one wants to cook food items that require less time for cook they need to be grilled directly while those needing more have to be indirectly grilled.

      In multilevel grilling, different heat levels are maintained in one grill. This is done through stacking coals in order to produce more than two heat zones. This type of grilling is best suited for food items that require searing on extremely hot coals and later on moved to fire that is not so hot so as to rightly finish off with the cooking.
